Three Khuns is a producer consortium within the Indigo Mountain co-op in Hopong, Myanmar, organized by members coming from the Pa-O ethnic group. Founded in 2020 by Khun Kyaw Min Htike, Khun Tun Lin, and Khun Kyaw Thein (literally, “Three Khuns”!), the group works with 14 producer members across Hopong, Pin Laung, Taunggyi, Hsi Hseng and Loilem townships. Together, they focus on producing high-quality coffees that showcase the unique terroir of the Shan Hills while creating new opportunities for Pa-O farming communities.

This lot is an anaerobic natural made from Catuai and Caturra varieties grown between 1,158 and 1,737 meters above sea level. After an initial drying period, the cherries are transferred into sealed food-grade tanks for 2-5 days of anaerobic fermentation before returning to raised beds to slowly dry for approximately 16 days. The result is a vibrant and intensely fruit-forward coffee with notes of Wine Gums, Blackberry and Butterscotch.

We especially love this coffee as a filter brew, where the fruit notes shine with incredible clarity. On espresso, it becomes jammy and wine-like, with a deep sweetness that lingers long after the last sip.

ORIGIN DEEP DIVE

Myanmar’s coffee story is fascinating and unexpected. While coffee was first introduced in the late 19th century during British colonial rule, it didn’t take off until much later. For decades, Myanmar’s Shan State was known more for poppy farming and opium production than for coffee. But in the early 2000s, efforts to combat opium cultivation sparked a shift. International development programs and the government encouraged farmers to transition to coffee as a sustainable alternative crop, and the high-altitude regions like Ywangan and Pyin Oo Lwin turned out to be perfect for Arabica production.

Initially, Myanmar’s coffee was grown for local consumption, but the specialty coffee movement put the country on the global map. Producers embraced natural and honey processing, resulting in coffees with vibrant acidity, fruity sweetness, and distinct flavour profiles that stand out on the world stage.

Today, Myanmar’s coffee industry is thriving, exporting over 83,000 bags (approximately 5,000 tons) of coffee annually. And based on how tasty these cups are, this is likely just the start.

What's exciting about this coffee

Three Khuns comes directly from Myanmar, and was imported by Steven and Stephen at Pink Headed Duck (PHD). The name comes from the three founders Khun Kyaw Min Htike, Khun Tun Lin, and Khun Kyaw Thein, and they run the Indigo Mountain co-op group in Hopong. “Khun” is similar to “Mr.” in English, and is used as a sign of respect. The coffee cherries come from producers who are part of the Pa-O ethnic group, and there are currently 14 members who are part of the organization.
